Sourcing Single-Origin: Inside the Yirgacheffe Washed Lot

Specialty coffee can sometimes feel wrapped in gatekeeping jargon. For us, great coffee comes down to two simple commitments: paying fair premiums directly to washing stations, and dialing in extraction so the cup tastes sweet without needing sugar.
Our current featured lot comes from the misty highlands of Yirgacheffe, grown at 2,000 meters above sea level by a cooperative of 340 smallholder farmers. The cherries are hand-picked at peak ripeness, washed in spring water, and dried slowly on raised African beds for 18 days.
In the cup, you will find jasmine florals, bergamot citrus, and a clean peach finish. We serve this both as our daily morning Batch Brew and steep it coarsely for 18 hours to create our House Cold Brew.
